Fresh Nixtamalized Masa — $10 / kilo

 

 

This is the same fresh masa we use to make our tortillas.

 

We start with whole-kernel corn grown right here in Wisconsin, cook it the traditional way through nixtamalization, and mill it fresh the day of pickup. Nothing dried. Nothing frozen. No masa harina. Just real, living masa—clean, fragrant, and full of flavor.

 

Our corn comes from two farms we trust deeply:

Heartland Craft Grains in Lodi, WI, a regenerative, non-GMO farm, and Meadowlark Organics, known for their heirloom, non-GMO corn. Both farms are members of the Artisan Grain Collaborative and are committed to growing corn with care for the land and the people who eat it.

 

This masa is incredibly versatile and perfect for tortillas, tamales, pupusas, gorditas, sopes, and more—but most importantly, it’s the foundation of everything we make.

Corn color varies depending on what we’re milling that week (white, blue, or yellow). Availability changes weekly.

Pickup at 2423 University Avenue, Madison, WI
Tuesdays & Thursdays, 3:00–6:00 PM

Order cutoff
Because corn must be cooked 24 hours in advance:

  • Tuesday pickup: order by Monday at 10:00 AM

  • Thursday pickup: order by Wednesday at 11:00 AM

Orders placed after the cutoff will be scheduled for the next available pickup day.

Storage
Store wrapped at room temperature if using Right away. 
For longer storage, refrigerate or freeze after pickup.
